CHARCOAL - HOBART’S NEWEST CONCEPT RESTAURANT NOW OPEN

6 September 2012

Hobart’s dining scene is set to be revitalised with a brand new concept restaurant on Collins Street - Charcoal - a Wood Fired Pizza, Tapas and Wine Bar which opened its doors last week.

Part of Hobart’s newest hotel and conference complex – the Grand Mercure Hobart Central Apartments – Charcoal offers local diners and hotel guests a delightfully modern culinary experience, with its menu designed to encourage shared dining.

Under the direction of Mercure Hadleys and Grand Mercure’s new Executive Chef Adam Roberts, Charcoal’s menu takes a modern twist on old favourites with non-conventional wood fire pizzas and tapas.

An enticing list of Epicurean pizzas include ‘Iberico’ made with 14 month aged Iberico ham, roquette, quail eggs and parmesan crumble and ‘The Tipsy Strawberry,’ Strawberries sous vide in Malibu with buttered crumbles.

The Tapas menu features dishes such as freshly shucked local oysters, sous vide duck with broccolini puree, brioche croute and orange jus, tea smoked ocean trout tortellini with saffron foam and snow pea leaf salad, and indulgent desserts such as chocolate fondant with crème fraiche and orange crystals.

A generous selection of leading Tasmanian wines has been handpicked by Restaurant Manager Lisieux Afeaki, formerly of White Sands Estate and Ironhouse Brewery, to complement the diverse and flavoursome variety of dishes.

Afeaki describes the venue as perfect for any gathering. “Charcoal’s modern interior and contemporary furnishings were carefully chosen to create a welcoming atmosphere and a culture that is communal, fun and of course addictive. We are really excited to open the restaurant doors and get the pizza oven roaring,” she said.

Grand Mercure’s new food and beverage offering serves up fresh local Tasmanian and Australian products at an attractive price point for hotel guests and locals alike. Charcoal is open for lunch from Wednesday to Friday and for dinner from Tuesday to Saturday.
